Pea
Soup
When I was
a kid, my mom was famous for her "hot dog" soup, which I refused to
even try because didn't eat anything that looked green and slimy.
I was in my late teens before I even chanced a sip -- and
have been hooked ever since. My mom, Nomi, got the recipe from
her mother-in-law, my Nana Mary, but it requires two days of cooking.
My recipe is simpler and quicker and still very tasty because I
use their trick of substituting kosher hot
dogs for the traditional ham.
Simple to make -- tastes great!

Soup
ingredients:
1
tsp. olive oil
1 medium onion, finely chopped
3-4 garlic cloves, minced
3-4
medium carrots, sliced 1/4-inch thick
20
oz. split peas, rinsed and drained
3-4
kosher hot dogs, quartered lengthwise, then sliced to make little wedges

cups organic chicken broth or stock
1/2
tsp. pepper
1 tsp. sea salt (or more to taste)
Recipe:
-In a soup pot, heat olive oil at medium heat, add chopped
onions, sliced carrots and minced garlic and saute until they soften
and start to carmelize (5 to 10 minutes).
-Add rinsed split peas and toss around to mix with other ingredients.
-Add chicken stock, salt and pepper. Cover (slightly ajar) and boil
vigorously 30 minutes.
- Turn down heat. Add hot dog wedges and simmer 30 minutes or until
peas are broken down into mush. Add water or broth to thin as necessary.
-Season with
salt and pepper to taste.
NOTE: I
usually reduce heat to lowest setting and let it sit
for an hour or more to help blend the flavors.
Recipe makes
6-7 pints. Enjoy! |
